It’s no secret that my new favorite grain is quinoa (see my recipe for Cranberry Quinoa Muffins). It’s high in protein, fiber AND iron. Plus, it’s gluten free. What’s not to love? I’m always on the lookout for new quinoa ideas, since we mostly eat it steamed, like rice.
Recently I bought a big bag of kale so I could make my kale chips. Unfortunately, I was too busy that week to babysit roasting kale (believe me, you don’t ever want to smell BURNT kale). So the bag just sat in the refrigerator.
Saturday morning I was preparing to cook my traditional hot weekend breakfast and remembered the bag of kale. What to make? I had already tried kale in a frittata (Butternut Squash Frittata with Crispy Kale). Super delicious, but I’m always itching to try something new.
I’ve been tired of my weekday breakfast (yogurt and a fiber bar). I don’t have time to make anything before work, so I needed something I could make ahead, that would be easily reheatable AND portable. Looking at the kale, I remembered my quinoa muffins and decided it would be fun to try my hand at a savory quinoa muffin. A little bit of Spam and half an onion later, I had my recipe. I hope you like it as much as I do!!
Green, Eggs and Spam Quinoa Muffins
Ingredients:
1 cup quinoa
3 eggs
1 cup kale, spines removed, torn into bite size pieces
1 cup shredded Mexican four cheese blend
1/2 cup diced Spam
1/2 an onion, diced
2 Tbsp. grated Parmesan cheese
Directions:
Cook quinoa according to package directions.
Preheat oven to 350F.
Combine all ingredients in a large bowl and mix thoroughly.
Spray a muffin tin with cooking spray. Spoon mixture into wells in muffin tin, until they are filled to the tops.
Bake for 25-30 minutes, or until golden brown.
Let cool for at least five minutes before removing from pan.

These yummy little muffins are great fresh and piping hot, but they also freeze well for later reheating. Once cooled, flash freeze them on a cookie sheet, then throw them all in a resealable bag. You can pop out one or two at a time in the morning, zap them in the microwave for 1-2 minutes on high and there’s your healthy breakfast!! So easy!!
