Chicken Pasta Stew Recipe

chicken pasta stew recipeNot much is more comforting on a chilly fall evening than a big bowl of chicken soup.  It’s not just the warmth and flavors that feel good.  It’s also gentle on upset tummies.

Bud came down with a sinus infection the other day a few days after he got food poisoning.  Antibiotics tend to be problematic on sensitive stomachs, so the doctor put Bud on a bland diet for the next couple of weeks.  Of course, chicken was the first thing we thought of.  Willow had this amazing recipe for chicken pasta stew.  It’s hearty but still soothing and feeds a large family for one night or one sickly teenager for a few days.

Chicken Pasta Stew Recipe


2 cups each celery, potatoes, carrots, sliced

1 lb. boneless, skinless chicken breast,  cut into bite-size pieces

1-2 tsp. lemon pepper

zest  of half a lemon

2-3 cloves garlic, minced

1 small onion, minced

1/2 tsp. thyme

1/4 tsp. Italian seasoning

1/8 tsp. salt

1 1/2 to 2 qts. chicken broth

2 cups collezioni  (also known as gnocchetti)

shredded Parmesan cheese, to  taste


In a large pot, saute’ garlic and onions in 1-2 Tbsp.butter, over medium heat, until translucent.

Add carrots, saute’ for five minutes.  Add potatoes  and continue saute’ing for five more minutes.  Add celery, chicken and all seasonings and continue to saute’  for an additional five minutes.

Add chicken broth and bring to a boil.  Add pasta and cook  for 14 minutes,  or according to pasta package directions.

Garnish with Parmesan cheese.
