What is a frittata? It’s a bit like an omelet, but you don’t have to flip it. It’s a bit like a quiche, but without a crust. Frittata recipes are yummy, healthy and super easy to make!! Frittatas are one of my favorite breakfasts. Basically I just pick different veggie combinations, add some cheese and eggs, and I’m good to go!!
Zucchini Onion Frittata Recipe
Ingredients:
1/2 cup chopped onions
1 zucchini, thinly sliced
1 clove garlic, minced
3 eggs, beaten
2 Tbsp. shredded cheddar cheese
Directions:
Preheat oven to 375F.
Coat a small, oven-proof omelet pan with cooking spray, then place over medium heat. Add onions, zucchini and garlic and saute’ until the onions are tender, about 5 minutes.
In a small bowl, combine the eggs and cheese. Pour over the zucchini-onion mixture.
Move the pan to the oven and bake until the frittata puffs and is just set in the center, about 5 minutes.
Cut into wedges and serve hot.

I’ve never had a Frittata before. They look really yummy and they look pretty easy to make!
I haven’t made a frittata before but I love eggs and cheese. I’ll try this when we harvest zucchini.

I will try this once our zucchini comes in. Once it starts there’s plenty for everything. This recipe sounds delicious.
