What is a frittata? It’s a bit like an omelet, but you don’t have to flip it. It’s a bit like a quiche, but without a crust. Frittata recipes are yummy, healthy and super easy to make!! Frittatas are one of my favorite breakfasts. Check out my zucchini onion frittata recipe.
Tomato Feta Frittata Recipe
1 tsp. onion powder
1/2 tsp. garlic powder
3 eggs, beaten
1/2 can diced tomatoes, drained
2 Tbsp. crumbled feta cheese
2 tsp. Italian seasoning
Preheat oven to 375F. Coat a small, oven-proof omelet pan with cooking spray and place over medium heat. Add the onion powder, garlic powder and tomatoes and saute’ about 2 minutes, until tomatoes are heated through.
In a small mixing bowl, combine the eggs, feta and Italian seasoning. Pour over the tomato mixture.
Move the pan to the oven and bake until the frittata puffs and is just set in the middle. Cut into wedges and serve hot.
