A couple of Saturday nights ago, Art and I were getting ready for our friends’ monthly wine and cheese party. We were supposed to bring an appetizer to share. Since we were low on funds, we decided to see what we could make with what we had on hand. My original plan was to make empanadas, but I was exhausted and empanadas can be a bit time-consuming (I’ll save them for a future recipe.) Art came up with the idea for baked sausage and cheese on a cracker, which we call redneck pizza. They’re easy to make and the guys at the party wolfed them down!!
25+ Wheat Thins ® or similar crackers
3 beef hot dogs, cut into round slices
3 slices of cheese, cut into 1 inch pieces (we alternated cheddar and jack cheese)
Fry the hot dog slices until browned.
Top each cracker with a small dot of mustard, a slice of hot dog and a slice of cheese, in that order. Place on a cookie sheet and broil in the oven for 3- 5 minutes, or until cheese is melted.
Authors note: You could also do these on a larger cracker and use sliced up bratwurst or hot links instead of hot dogs.
