Bud’s girlfriend is a great cook!!  She has some pretty simple but absolutely delicious recipes that have been passed down from her mom and grandma.  I was lucky enough to convince her to share her cream sauce recipe with my readers.  It is so yummy and great over any kind of pasta, but especially gnocchi.

Cream Sauce For Pasta


1 clove garlic

1 clove shallot

1/2 stick butter

2 cups milk

2-3 Tbsp. flour

1-2 tsp. of chicken bouillon powder

1-2 cups reserved water from cooking pasta


Melt the butter over medium heat in a medium saucepan.  Using a very fine grater, grate the garlic and shallot into the melted butter.  Cook until bubbling, about 3 minutes.

cream sauce for pastaSlowly whisk in flour until sauce is thick and pastey.  Slowly stir in 2 cups milk.  Continue cooking for another 3 minutes or so.

cream sauce for pastaWhisk in 1-2 tsp. of chicken bouillon powder to taste, if desired.

When pasta is done, cooking, drain it, but reserve about 2 cups of the cooking liquid.  Fold the pasta and sauce into the reserved liquid and continue cooking for 2-3 minutes more, or until desired consistency.

Top with grated Parmesan and a little basil for garnish.
