Unexpected Blessings

My uncle owned a small plane when I was young.  I always wanted to go flying with him but somehow the timing never worked out.  Ever since then I have had a pipe dream (more of a fantasy, really) of flying somewhere on a private plane, with that special someone, just to “do dinner”.  Wouldn’t that be awesome?

Last Friday, my good friend Debbie texted me this:

Debbie’s husband Tim has his private pilot’s license.  Until recently, he was only checked out for two seater type planes.  But a few weeks ago, he finished his qualifications for four seaters.  So, he rented a plane for the night and guess what?  My dream came true!!   (the photo in the title is of Debbie and I in the backseat of the plane). We flew to Monterey, had dinner at El  Torito’s (don’t judge, it was what we could afford) and flew home.

On the way back to Napa, Tim got permission from air traffic control to give us a tour of San Francisco Bay.

This was seriously one of the absolute BEST experiences of my life!!

A few days later I reflected on this unexpected blessing.  And I got to thinking, if God gave me this incredible gift, which really is just a pick-me-up, not anything I actually NEED, then why don’t I trust Him to cover the basics in my life?

This pondering brought to mind the verses from Matthew quoted above.  If God can make the beautiful flowers and every other part of His creation, then why wouldn’t he take care of us?  I’m going to try to stop worrying so much about my day to day life and start trusting God to shoulder my burdens.  His shoulders are much broader and stronger than mine anyway. 😉

Spicy Everything Bagel Breakfast Sandwich

Spicy Everything Bagel Breakfast SandwichI have loved bagels since my first day of high school when I found out I could buy a piping hot bagel with cream cheese from the student store for around 50 cents.  The combination of chewy on the outside and soft on the inside was so appealing.  And always with cream cheese!!

Five or so years ago I gave up bagels, except on rare occasions, as part of my attempt towards a healthier lifestyle.  I believe cutting out unnecessary carbs really helped a lot in my 25 pound weight loss.

About a month ago, Devin asked me to buy him a pack of everything bagels.  I read the label and was surprised to find out that the average everything bagel had 3 grams of fiber and 11 grams of protein (not including the cream cheese)!! I was happy to re-introduce everything bagels into my breakfast routine.

As my regular readers know, my work day breakfasts are pretty much all the same, but on the weekends I love to switch it up and experiment with eggs, meats and basically whatever else I have in the house.

This weekend I decided to try making an everything bagel breakfast sandwich.  Of course I had to add my own favorite touches (sriracha sauce, sun dried tomatoes, mushrooms and spinach).

Spicy Everything Bagel Breakfast Sandwich


1 everything bagel, sliced in half and toasted

4 tablespoons cream cheese

1 tablespoon sun dried tomatoes, diced

a few drops of sriracha sauce (to taste)

1 spicy frozen sausage patty

3 crimini mushrooms, stems removed, washed and sliced

1 handful of spinach, rinsed and patted dry

1 egg, beaten

1/4 cup cheddar cheese, shredded


While the bagel is toasting, cook the sausage and mushrooms in a nonstick saucepan over medium heat.   After about 5 minutes, flip the sausage and continue cooking another 2 minutes.

While the sausage and mushrooms are cooking, combine the sun dried tomatoes, cream cheese and sriracha sauce in a small bowl.  Mix until smooth.

When the bagel is done toasting, remove it from the toaster and spread both halves with the cream cheese mixture.  Top one half with the sausage, once it is done cooking.

Meanwhile, add the spinach to the mushrooms and continue cooking until the spinach is wilted and reduced in size.  Top the sausage with the cooked mushrooms and spinach.

Add the beaten egg and cheese to the pan and cook, stirring constantly, until firm.  Top the mushrooms and spinach with the cooked egg and finish it off with the other bagel half.
