My Review:

It’s no secret that I’m a huge Liz Schulte fan. The Abyss books are so original – I just can’t say enough good about them. Inferno is no exception. I love that with each new story the characters become more fully developed. This time around, the story alternates between Holden, Baker and Femi. I enjoyed the romantic tension between Baker and Femi and trying to guess how their relationship might develop. I also enjoyed reading Femi’s perspective on the story. Her character is so fierce – I wish I had as much spunk as she does.

“I don’t tiptoe around anyone.” Femi flashed a grin. “I glide, bitches.”

Inferno also concentrates less on Holden and Olivia’s relationship, which is a nice change of pace. Holden is as conflicted as ever, though.

“I was Olivia’s soul mate, the leader of the free Jinn, the one who made the hard decisions, the one who let people go, the abomination, and the savior. I was evil who strove to be good…”

Book 2 of the Jinn Trilogy ends with a major cliffhanger – or does it? Let’s just say there better be a book 3!!

Pineapple Coconut Cream Stuffed French Toast Recipe

pineapple coconut cream stuffed french toast recipeI’ll admit it.  I was stressed out Sunday morning.  And when I’m stressed I look  for comfort food.  And get creative.

I wanted french toast, but the normal kind. I hadn’t made stuffed french toast in a long time, so that sounded really delicious.  However, I didn’t want to make my usual stuffed french toast with berries and cream cheese.  I looked around the refrigerator to see what i could find.  Lo and behold – pineapple tidbits and leftover coconut cream.  Now we’re cooking!!

Pineapple Coconut Cream Stuffed French Toast

Ingredients (serves 4):

8 slices of your favorite bread

8 Tablespoons coconut cream

1 cup pineapple tidbits, drained

1 egg

2 tsp. milk

1 1/2 tsp. butter

coconut syrup

more coconut cream, as desired


Spread each slice of bread with 1 Tablespoon of coconut cream.

Put 1/4 cup of pineapple tidbits on 4 slices of bread, then top with another slice.  Squish together a little so they stay stuck.

On a small plated, beat the egg with the milk.

Melt butter in a small frying pan over medium heat.

Dip each side of “sandwich” into egg mixture.

Cook for approximately 3 minutes per side, or until golden brown (longer if you use thicker bread).

Serve topped with coconut syrup and more coconut cream.
