easy berry phyllo tartsSummer is almost here, and that means BERRIES!!  Strawberries, blackberries, raspberries, blueberries – I love them all.  My old standbys for berry desserts are strawberry shortcake and blackberry cobbler.

Since I was diagnosed with venous insufficiency, I have been on a low sodium diet.  Unfortunately, my traditional berry favorites are high in both sodium and calories.  I started trying to think of a delicious berry recipe that would be low-sodium and a reasonable calorie range.

I came up with these scrumptious and easy Berry Phyllo Tarts (scroll down for recipe):

Easy Berry Phyllo Tarts

Ingredients:

4 sheets phyllo dough

cooking spray

4 Tsp. sugar

1 1/2 cups mixed berries (fresh or frozen)

1/2 cup sugar

plenty of Reddi-wip

Directions:

Preheat oven to 400F.

Place a sheet of phyllo on a cutting board or other flat surface; spray with cooking spray; dust gently with some of the sugar.  Top with another sheet of phyllo.  Repeat 3 times, finishing with spray and sugar.

Using a sharp knife and a biscuit cutter or large drinking glass, cut phyllo into 3-inch circles.  Place each stack of circles into a muffin cup, pressing in gently.

Bake for 7-10 minutes until golden.  Remove from oven.  Let cool slightly then remove from muffin tin.

In a small saucepan, combine the berries and 1/2 cup of sugar.  Cook over low heat, stirring constantly until berries have softened and sauce is slightly thickened.

Spoon berry mixture into phyllo cups and top with plenty of Reddi-wip.
