Over the weekend I was trying to think of what recipe I could make for the blog. I had some over-mushy bananas, so I thought I would make some banana bread. As I was scouring the internet for recipes, I happened to stumble across a Cinco de Mayo page with churros. I LOVE churros and I thought banana would go with that yummy fried dough flavor perfectly!! I did a little experimenting and the result is below:
1/4 cup water
1/4 cup butter
3/4 cup milk
2 1/4 cups flour
1 tsp. baking powder
2 over-ripe bananas, mashed
4 Tbsp. sugar
1 tsp. cinnamon
Bring water, butter and milk to a boil over medium heat, stirring constantly.
Turn off heat and add flour and baking powder, stirring rapidly until a soft ball is formed.
With an electric mixer, beat in the eggs one at a time, followed by the banana.
Allow to cool for a few minutes. Spoon into a pastry bag (or you can use a gallon storage bag and snip a corner).
Heat oil (at a 2 inch depth) to 350F in a deep pan or fryer.
Pipe dough in 2-3 inch tubes directly into hot oil.
Fry until golden brown, turning once halfway through cooking.
Remove churros to a paper towel to drain.
Combine sugar and cinnamon on a plate.
Roll churros in cinnamon-sugar mixture.
