Tasty Kale Chips Recipe

A few years ago I thought of kale as nothing more than a buffet decoration or lizard food (our bearded dragon loved the stuff!!)  But more recently I have come to realize the many health benefits of kale and tried to find a way to incorporate it into my diet.

One cup of chopped kale contains 33 calories, almost 3 grams of fiber, 9 % of the daily requirement of calcium, 206% of vitamin A, 134 % of vitamin C and 684% of vitamin K!!  The problem is, at least in my opinion, it is also a fairly strong tasting and smelling vegetable (especially when cooked).  And I’m just not a huge fan of it in salads either.  What to do? What to do?

Recently I’ve seen a few recipes for kale chips.  I love dried seaweed, so I figured kale chips might be similar.  All the recipes were pretty basic, so I decided when I made my own to spice them up a bit.

Tasty Kale Chips Recipe

Ingredients:

1 bunch kale

2 Tbsp. olive oil

1/2 tsp. salt

1/2 tsp. garlic powder

1/2 tsp. onion powder

Directions:

Preheat oven to 275F.  Strip the ribs from the kale leaves.  Rinse the leaves and dry thoroughly.

Cut into 1-2 inch pieces and toss in a bowl with remaining ingredients.  Dump onto a cookie sheet and spread out.  Bake about 20 minutes, until nice and crispy.  Serve immediately.  Can be stored in a ziploc bag, but will soften and have to be retoasted slightly to recrisp.

With the addition of the olive oil there will be some added calories, but you still get the health benefits and you don’t have to choke it down!!
