Chocolate Caramel Surprise Cupcakes Recipe #WerthersCaramel

A fond memory of my childhood is making caramel apples.  My mom would melt the caramels and allow us to dip our apples (on sticks) into that sticky, gooey goodness. In college, I confess that sometimes for lunch I would have a package of caramels and a diet soda from the vending machine on campus.  In more recent years I have often enjoyed unwrapping the deliciousness that is a Werther’s Original Caramel Hard Candy and just letting it melt away in my mouth.

A few weeks ago the good people at Werther’s sent me a couple of packages of their new Werther’s Original Baking Caramels and asked me to create my own original recipe.  I came up with this fun idea:

Chocolate Caramel Surprise Cupcakes

Ingredients:

1 pkg devil's food cake mix1 cup water
1/3 cup vegetable oil3 eggs
1 pkg. Werther's Original Baking Caramels, divided3 cups powdered sugar
1/3 cup butter, softened1 1/2 tsp. vanilla
3 oz. unsweetened baking chocolate2-3 Tbsp. milk

Directions:

Make the cupcake batter according to package directions.  Line muffin pans with cups (or grease them, but muffin cups are better).  Fill each muffin cup about 3/4 of the way full of batter.  Press 1 unwrapped caramel into the center of each cup, just until covered.  Bake according to package directions and allow to cool.

While the cupcakes are cooling, melt the unsweetened baking chocolate in a double boiler, over medium heat stirring constantly, until smooth.  Melt 3-4 caramels in a microwave safe bowl with 1 tsp. water on high for about 20 seconds at a time, stirring between, until of smooth consistency.

Cream together the butter and powdered sugar.  Mix in melted chocolate, melted caramel and vanilla until well blended.  Add milk, one tablespoon at a time until frosting reaches the desired consistency.  Now you can frost the cupcakes!!

After frosting, melt 10 caramels in a microwave safe dish with 1 Tbsp. water on high, for about 30 seconds at a time, stirring between, until of smooth consistency.  Drizzle the melted caramel over the cupcakes with a spoon.
