Spinach Pesto Flatbread Pizza

spinach pesto flatbread pizzaMy family loves pizza.  We are a once a week pizza family, although I know Art and Bud would eat it more often!!  I am getting to the point, though, where the traditional pepperoni or sausage pizza is just too much for me.  I  have been looking for healthier alternatives.

A few weeks ago Bud brought home some lavash from his girlfriend’s house.  Fresh lavash is a soft, flexible flatbread that can be used to make wraps or, in my case, pizzas.  I decided to make a yummy, healthy pizza with ingredients I had on hand and came up with this recipe for

Spinach Pesto Flatbread Pizza

Ingredients (for each pizza):

1 lavash (soft flatbread)

1/2 cup pesto

1 cup clean spinach leaves

1/2 cup diced tomatoes

1/4 cup crumbled feta cheese

Directions:

Preheat the oven to 400F.  Lay out the lavash on a baking sheet covered with foil or parchment paper. Spread the pesto evenly over the flatbread, then layer on the spinach, tomato and cheese, in that order.  Bake for 5 minutes.
