Peanut Butter Protein Pancakes With Berry Topping

Since I’ve been trying new healthy recipes (don’t worry, I still have some old, unhealthy ones in the works as well, LOL), I have found that protein powder is my friend.

Recently I read an article on Sparkpeople which cited a study by the American Journal of Clinical Nutrition.  The findings from the study were that the ideal diet for weight loss contains 30% protein, 20% fat and 50% carbohydrates.  This combination provided the most satiety for participants.

As I started working out harder I was finding it more and more difficult to get enough protein.  Occasionally I will eat a protein bar for a snack, but they are so highly processed I try to save them for treats.  Bud has vanilla protein powder on hand which he uses for making his morning shakes.  For a few years now he has had a hard time keeping on weight, and the protein powder shakes help.  I have made my own fruit smoothies with protein powder, which I enjoy, but I had not really thought about using it for anything else.

Then one day I was craving pancakes and came across a recipe for protein powder pancakes.  Of course, being me, I had to tweak it a bit and the result was so delicious I had to share it with you!!

Peanut Butter Protein Pancakes with Berry Topping

Ingredients:

1 scoop vanilla protein powder

1 large egg

2 Tbsp. quick oats

dash cinnamon

1 Tbsp. creamy peanut butter

1/4 cup fresh or frozen (thawed) berries

1 Tbsp. maple syrup

Directions:

Mix first five ingredients in a bowl.  Spray a non-stick skillet with cooking spray and place over medium heat.  Pour mixture by 1/4 cup scoops into pan.  Cook each pancake until bubbles form along the edge and pop, then flip and continue to cook until golden brown.  Mix maple syrup with berries and pour over the top.
