Dark Chocolate Brownies with Chocolate Mousse Frosting

dark chocolate browniesOriginally I had planned to share with you today Bud’s girlfriend’s recipe for pumpkin pancakes.  Unfortunately, browsing through the pantry today I discovered I was out of canned pumpkin.  A trip to the grocery store and no pumpkin to be found in the canned vegetable aisle (I know, don’t send me emails, apparently canned pumpkin is on the baking aisle – I figured that out after I got back home).

So another browse through the pantry and I came up with the ingredients to make:

Dark Chocolate Brownies with Chocolate Mousse Frosting

(can you say PMS?  I knew you could 😉 I’d love to say I made these from scratch, but I didn’t.  if you have a scratch recipe for something similar please share!!

Ingredients:

One box dark chocolate brownie mix (preferably the kind with dark chocolate chunks)

1/4 cup water

1/2 cup oil

1 egg

One box chocolate mousse mix

1 cup milk

Directions:

Preheat oven to 325F.  Follow directions on the box of brownie mix.  Spread in an 8″ x 8″ pan and bake for 40-45 minutes.

While brownies are baking, make the mousse, following the directions on the box.  Cover the bowl with plastic wrap and place in the refrigerator for 1-2 hours.  This will also give the brownies time to cool off.

After brownies are done baking, take them out and let them cool in the pan, about 2 hours depending on the weather.  Then take the mousse out of the refrigerator and using a spatula, cover the brownies with the mousse.
