Bud’s girlfriend is a great cook!! She has some pretty simple but absolutely delicious recipes that have been passed down from her mom and grandma. I was lucky enough to convince her to share her cream sauce recipe with my readers. It is so yummy and great over any kind of pasta, but especially gnocchi.
Ingredients:
1 clove garlic
1 clove shallot
1/2 stick butter
2 cups milk
2-3 Tbsp. flour
1-2 tsp. of chicken bouillon powder
1-2 cups reserved water from cooking pasta
Directions:
Melt the butter over medium heat in a medium saucepan. Using a very fine grater, grate the garlic and shallot into the melted butter. Cook until bubbling, about 3 minutes.
Slowly whisk in flour until sauce is thick and pastey. Slowly stir in 2 cups milk. Continue cooking for another 3 minutes or so.
Whisk in 1-2 tsp. of chicken bouillon powder to taste, if desired.
When pasta is done, cooking, drain it, but reserve about 2 cups of the cooking liquid. Fold the pasta and sauce into the reserved liquid and continue cooking for 2-3 minutes more, or until desired consistency.
Top with grated Parmesan and a little basil for garnish.
