Chickpeas, or garbanzo beans are one of those foods you either love or you hate. Art calls them “garbage beans”. I, however, am a huge fan of the little legume. Following is one of my favorite recipes for chickpeas, adapted from Sparkpeople.
Ingredients:
1 tsp. olive oil
1/2-1 potato (depending on size), cut into 1/2″ cubes
1/2 cup chickpeas (canned or cooked)
1 medium tomato, diced or 1/2 can diced stewed tomatoes
1/4 cup shredded cheese
Directions:
Saute’ potato cubes in olive oil
medium heat, until cooked through, add tomatoes and chickpeas and cook until everything is well-heated. Remove from heat and stir in cheese.

That looks yummy, Teressa! I love chick peas, too. I make a homemade hummus that is super-yummy with them.
Your hummus sounds good, Nancy. You should put up the recipe on your blog.
Thanks Teressa, but just how did you know I had the chick peas ready to do something… and no idea what I was gonna do yet? Now I do!

Oh my gosh! I am so making this tomorrow! My step daughter loves chick peas (she’ll eat them straight from the can even!) but I never know how to make them. I also have some potatoes I need to use up so this is perfect timing.
